We all know the feeling. It’s 5pm, and we just start thinking about dinner. Kids are hungry. Husband is hungry. Not to mention mom is hungry too. I am not much of a meal planner. I used to always plan meals out for the week, but now I fly by the seat of my pants. I make sure to always keep a bunch of fresh produce around and some bulk staples. I usually am able to make a pretty decent dinner from what I have on hand. I’m sure when life slows down a bit, I’ll go back to planning out dinners and doing things a bit more gourmet or that require more prep. But right now, I’m going for meals I can make from scratch that are healthy, quick, and easy.

My #2 Go To Meal
I do have another meal that we also eat very often at my house. I make a huge batch of it at once and freeze most of it. What is my #2 favorite meal? Amazing veggie burgers! Seriously, these are fabulous! Again (like the quinoa dish), I serve these to guests who come over and normally are meat lovers, and they LOVE these veggie burgers. I get texts and emails all the time from friends asking for this recipe. They take a bit of time to make, but I triple the batch and freeze most of them. If I triple it, I can make around 30 burgers.

1 | Like I said before, I suggest double or tripling the recipe. It is a bit time consuming to make so by making extra, you can freeze a bunch and use it for later.
2 | We prefer ours cooked in a skillet with oil. We’ve done the oven and grill, but they end up being a bit dry that way. If you freeze them, you can put them straight in the skillet without thawing them. They thaw as they cook and always turn out amazing.
3 | I use navy or northern beans instead of black. I like the taste better, and navy beans are high in calcium.
4 | Add all sorts of toppings. My favorite is pesto, goat cheese, and a tomato slice. Yum yum!
5 | If you freeze them, lay out the patties on a cookie sheet. Freeze them. Remove from freezer and put patties in a bag or storage container. Return to freezer. Simple as that!
I hope you enjoy these veggies burgers as much as I do. They are a great thing to have in the freezer for those days you forget to think about what you are making for dinner until just a few minutes before dinner time! We all have those days…
